Grown by the Mendoza Martínez family at the Xhub Guldan cooperative in Zegache, Oaxaca. A white landrace garbanzo — not the uniform commodity chickpea, but seed the community has kept and replanted for generations. Sown in autumn, harvested in early spring, grown on rainfall alone.
Sweet and nutty, with a toasted, green edge. They cook to a medium broth — the garbanzo for sopa de garbanzo tostado, for amarillo de garbanzos, and for a plain broth with calabacitas.
